Linda Raedisch As with a few teas over the years, I didn't like Wild & Ancient Red Tai the first time I tried it, and now it's one of my favorites. I brewed it "properly" the first time and thought it was too sweet. I gave it another try a few days later and, I must admit, forgot about it in the gaiwan. I guess you could say I overbrewed it. Anyway, there was a depth of taste there in the dark red liquor that I hadn't gotten before. I needed to "overbrew" this tea to be properly introduced to it. Now I can brew it much more briefly and still get the full depth. And since it's wild, it stands up to multiple steeps.
